INSTRUCTIONS

For Pasta:

2 cups all-purpose flour

2/3 cup warm water

A pinch of salt

For Wild Fennel Sauce:

2 cups wild fennel fronds, finely chopped

1/3 cup extra-virgin olive oil

3 cloves garlic, minced

Salt and pepper to taste

Grated ricotta cheese, for garnish (see separate recipe below)

To Make Pasta:

Combine the all-purpose flour and a pinch of salt in a mixing bowl.

Stir in warm water gradually until a dough form.

Knead the dough for 5-7 minutes, or until it is smooth. If it's too dry, add more water; if it's too sticky, add more flour.

Allow the dough to rest for 30 minutes, covered.

Roll out the pasta dough to the required thickness and cut it into the pasta shape of your choice, such as fettuccine or pappardelle.

Allow about an hour for the pasta to air dry before cooking.
